Evelyn's Desserts

 


Date Pudding 

Syrup:

  • 2 C. brown sugar
  • 3 C. water
  • 1 T. butter
  • 1 t. vanilla

Batter:

  • 3/4 C. white sugar
  • 1 C. dates chopped
  • 1 C. nuts chopped
  • 3 t. cocoa
  • 2 t. baking powder
  • 1/2 C. milk
  • 2 T. melted margarine
  • 1 1/4 C. sifted flour

Directions:

  1. Mix Syrup contents thoroughly in pan & cook slowly for about 10 min while mixing Batter
  2. Mix sugar, dates, nuts, cocoa, baking powder.
  3. Add milk and stir
  4. Add melted margarine and stir in flour
  5. Pour syrup in pan 8x10.5" (if you use a glass baking dish cook syrup a little before pouring in dish)
  6. Put batter into syrup and mix slightly
  7. Bake at 350 for 30 min

Did you know:  

Grandma used to make this dessert all the time at her house when we visited.  She loved chocolate but couldn't eat it for heart health reasons so she invented this as a replacement.  I've never had this dessert anywhere else other than the times mom made it nor have I ever seen it on any menu since.  Truly an ultra unique dessert that is all Grandma.
