Mom's Egg & Sausage Bake

Ingredients:

  • Cube 8 slices bread and put in 9x13 baking dish (greased)
  • 2 C. Grated Sharp Cheddar Cheese
  • 1 lb. smoked sausage sliced
  • 4 eggs
  • 2 1/2 C. milk
  • 3/4 t. dry mustard
  • 1 can cream mushroom soup with 1/2 C. milk

Directions:

  1. Combine last 5 ingredients and pour over bread cubes.
  2. Put in refrigerator overnight (optional)
  3. Pour diluted soup over top and bake at 300 for 1.5 hrs uncovered

Mom would prepare this on Christmas mornings and other occasions when family would stay at her house since it is a great way to feed a lot of people for breakfast.  Leftovers are great too!


Farmer's Omelet

 

Ingredients: (1 serving)

  • 1 T. veg oil
  • 1 diced onion
  • 1 diced green pepper
  • 1/2 C. sliced, peeled boiled potatoes
  • 2 eggs (whites or 1/2 C. egg beaters)
  • 1/2 t. minces parsley
  • paprika

Directions:

  1. Brown onion + green pepper in oil
  2. Add potatoes + saute 5 min
  3. Mix eggs with milk or water and parsley
  4. Pour over potato mixture + cook (stir slightly until eggs firm)
  5. Sprinkle with paprika
  6. Serve on hot plate (1 serving)
